Moroccan couscous: A stew cooked in saffron sauce

For a convivial and hearty meal, this saffron-infused couscous combines tender meat, chickpeas, and a rich, flavorful sauce. A classic and comforting recipe, perfect for sharing a convivial moment around a warming and characterful dish.

Ingredients and Information:

  • Meat (lamb or chicken), approximately 750g (or according to the number of guests)

  • Chickpeas soaked overnight (quantity according to taste)

  • Sliced onions

  • Spices: ginger, saffron, salt, optionally clarified butter or olive oil

  • For the saffron sauce: onions, butter or oil, saffron, spices, and optionally raisins or prunes for sweetness

  • Semolina (couscous) on the side, to serve

  • Preparation time: ~30–45 min (preparation + setup)

  • Cooking time: approximately 1 hour + cooking time for the semolina according to instructions (variable)

  • Serves: 4-6 people

Preparation :

  1. In a pot or Dutch oven, sauté the onions in oil (or butter), add the meat, spices (including saffron), chickpeas, and enough water to cover. Simmer over low heat for 45–60 minutes until the meat is tender.

  2. Prepare the saffron sauce separately: fry onions, add butter (or oil), saffron, spices, and possibly dried fruit (raisins/prunes) for added depth.

  3. Serve the meat and its sauce on a bed of hot couscous, optionally garnished with vegetables, fresh herbs or a sweet and savory touch.

Presentation suggestion:

  • Arrange the couscous in a dome shape in a large traditional dish (or deep dish), then make a small well in the center to place the meat and sauce in — a typical and aesthetic style.

  • Arrange the vegetables and chickpeas in a colorful way around the couscous dome — play with colors (orange vegetables, green vegetables, cooked chickpeas) for a visually appealing dish.

  • Before serving, sprinkle with some fresh herbs (coriander, parsley) and some toasted almonds or seeds to play on textures, contrast and elegance — this reinforces the “festive meal” aspect.
